Business and education background:

I was self-taught. I learned most of what I know from Chef Jack Shoupe at The Governor’s Club and Chef Eric Favier at Chez Pierre.

What made you choose this career path?

I always loved food and the art of cooking.

How old were you when you cooked your first dish and what did you cook?

I was probably eight years old. I want to say it was a piece of snapper; some kind of fish. I stayed home sick from school and saw a cooking show and wanted to try it. 

Family?

I have a wife, Lori, and three children: James, Ty and Piper Ray.

What is your favorite dish to cook/signature dish?

My favorite is crab cakes. My signature dish is bacon-wrapped lobster tail with risotto, sautéed arugula and lobster sauce.

What is your favorite dish to eat?

Foie gras.

What do you like to do when not cooking?

Spend time with my family.

What is your philosophy about food and/or cooking?

Cook with the freshest, finest ingredients and cook with your heart and you’ll have great results.

What is the most important item in your kitchen?

My chef’s knife.

Who cooks for you at Thanksgiving?

My mother.
